Oolong «Shui Jin Gui» («Water Golden Turtle») is one of the oldest varieties of yancha which got its name for dense relief leaves resembling the shape of a tortoise shell. A more romantic version claims that the immortal spirit of the Golden Turtle, the caretaker of the tea garden in the celestial halls of the Lady of the West, Si Wang Mu, embodied in the tree. Hearing the ritual prayers of the tea growers in the Wuyi Mountains and touched by their sincerity, the spirit left its abode and turned into a tea bush. Made in the Yunlong tea farm (moderate fire).

In appearance: middle-sized, thin, lengthwise twisted brown leaves. The aroma is intensive, spicy-biscuit. The liquor is transparent, with an amber shade.

The bouquet of the ready-made tea is warm, multifaceted, with notes of spicy herbs, toasted biscuit, nuts, flowers and fruits. The aroma is warm and deep, complex. The taste is full-bodied and smooth, sweetish, a bit astringent, with mineral notes and lingering aftertaste.

Brew tea with hot boiling water (95°C) in a porcelain gaiwan or in a teapot of porous clay. The proportion is 5 g per 100 ml. The time of the first steeping is about 5-7 seconds. After that do short steeps (just for 1-2 seconds), increasing steeping time for each subsequent step, if necessary. You can repeat this method up to 6-7 times.

Oolong «Bei Dou» is a great choice for a gungfucha style. We especially recommend it to those Wuyi oolong lovers who appreciate its delicate floral range.
