Chinese red tea is a strongly fermented tea (70-90% oxidation). It is known as “black tea” outside of China, thanks to 17th century European merchants simplifying tea classification down to two categories (green vs. black).
Red teas have in common that slightly withered tea leaves are rolled and are left to oxidize for several hours, after which they are slowly heated. The general rule is that the slower the heating process and the more moderate the temperature during fermentation and drying are, the better the red tea will be.
