Yunnan Baihao Yinzhen, also known as Yunnan Silver Needle, is a type of white tea from Yunnan, a province in southern China. It is made from the youngest leaves and buds of the tea plant, which are covered in fine white hairs, giving it a silvery appearance.

Yunnan Baihao Yinzhen is known for its delicate and subtle flavor with a slightly sweet and floral aroma. It is a delicate tea, so be careful not to steep it for too long or use boiling water, as this can result in a bitter taste. 

 Compared with the fuding silver needle tea from Fujian province, Baihao Yinzhen from Yunnan have longer and stronger leaves which  produce less grassy but more refreshing aroma.

Steep the tea in a hot water (85-90°C) in a gaiwan or a teapot made of porous clay. The proportion is 5 g per 100 ml. The time of the first steeping is about 10-15 seconds. After that do short steeps (just for 3-5 seconds) increasing steeping time for each subsequent step, if necessary. You can steep the tea up to 6 times.
